Ingredients

✔️ ½ teaspoon thyme
✔️ 1 bay leaf
✔️ 2 boneless, skinless chicken breasts (or thighs)
✔️ ¾ cup uncooked white or brown rice
✔️ Salt to taste
✔️ Juice of ½ lemon (optional, for brightness)
✔️ Fresh parsley for garnish


Instructions

Step 1: Sauté the Vegetables

1️⃣ Heat olive oil or butter in a large pot over medium heat.
2️⃣ Add onions, garlic, celery, and carrots. Sauté for 5-7 minutes until softened.

Step 2: Build the Broth

3️⃣ Pour in chicken broth and add black pepper, paprika, thyme, and bay leaf.
4️⃣ Bring to a gentle boil, then reduce heat to low.

Step 3: Add the Chicken

5️⃣ Place chicken breasts or thighs in the broth. Cover and simmer for 20-25 minutes.
6️⃣ Remove the chicken, shred it with two forks, and return it to the pot.

Step 4: Cook the Rice

🔹 Option 2: Cook rice separately and add it before serving to prevent sogginess.

Step 5: Final Seasoning & Serving
