Description

A soft and moist coffee cake oatmeal with a crunchy, sweet streusel topping, perfect for breakfast, brunch, or dessert.


Ingredients

  • 1 cup rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1/2 cup chopped pecans
  • 1 tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, mix rolled oats, flour, baking powder, baking soda, and salt.
  3. In a separate bowl, beat butter and brown sugar until fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Gradually add dry ingredients to wet mixture, alternating with milk.
  6. In another bowl, mix pecans, cinnamon, 1/4 cup brown sugar, and 2 tbsp butter to form the streusel topping.
  7. Pour batter into the prepared pan and sprinkle streusel topping evenly over it.
  8. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool before slicing and serving.

Notes

For a healthier version, substitute part of the butter with unsweetened applesauce and use whole wheat flour instead of all-purpose flour.
