For the Hot Water Crust Pastry:
- 3 ½ cups (450g) all-purpose flour
- ½ cup (115g) lard or butter
- 1 cup (240ml) boiling water
- 1 teaspoon salt
For the Meat Filling:
- 1 lb (450g) ground mutton or beef
- ½ cup breadcrumbs
- 1 teaspoon salt
- 1 teaspoon black pepper
- ½ teaspoon white pepper
- ¼ teaspoon nutmeg
- 1 small onion, finely chopped (optional)
- 2 tablespoons beef stock or water
Instructions
1. Prepare the Hot Water Crust Pastry
- Heat the lard (or butter) and boiling water in a saucepan until melted.
- In a large bowl, combine flour and salt, then slowly pour in the hot liquid, stirring continuously.
- Once cool enough to handle, knead until a smooth dough forms. Let it rest for 15 minutes.
- Press portions of dough into greased muffin tins or traditional Scotch pie molds.
- Roll out remaining dough and cut circular lids for the pies.
2. Make the Meat Filling
- In a bowl, mix ground meat, breadcrumbs, salt, black pepper, white pepper, and nutmeg.
- Add beef stock or water and mix until well combined.
- Fill the pastry shells with the meat mixture, pressing down gently.
3. Assemble & Bake
- Brush the pastry edges with water, then place the lids on top, sealing the edges.
- Cut a small hole in the center of each lid for steam to escape.
- Brush with egg wash for a golden crust.
- Bake at 350°F (180°C) for 30–35 minutes, until golden brown.
- Let cool slightly before serving.
Notes
- Traditional Scotch pies use mutton, but beef is a great substitute.
- For extra crispiness, bake for 5 more minutes at 375°F (190°C).
- Store leftovers in an airtight container for up to 3 days.
