For the Steak:

  • 8 oz flank steak, ribeye, or sirloin, thinly sliced
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • ½ tsp sesame oil
  • ½ tsp white pepper

For the Fried Rice:

  • 2 cups cold, cooked rice (preferably day-old)
  • 2 tbsp vegetable oil
  • 2 eggs, lightly beaten
  • 3 cloves garlic, minced
  • 1 tsp ginger, minced
  • ½ cup frozen peas and carrots (optional)
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • ½ tsp sesame oil (for finishing)
  • 2 green onions, chopped

Instructions

1️⃣ Marinate the Steak:

  • In a bowl, mix soy sauce, cornstarch, sesame oil, and white pepper.
  • Add the sliced steak and marinate for 10-15 minutes.

2️⃣ Cook the Steak:

  • Heat 1 tbsp of oil in a wok or large skillet over high heat.
  • Sear the steak for 2-3 minutes per side until browned. Remove and set aside.

3️⃣ Scramble the Eggs:

  • Lower heat to medium, add ½ tbsp of oil, and scramble the eggs. Remove and set aside.

4️⃣ Stir-Fry the Rice:

  • Increase heat to high, add ½ tbsp of oil, and sauté garlic and ginger for 30 seconds.
  • Add the cold rice, breaking up clumps, and cook for 2-3 minutes.

5️⃣ Combine Everything:

  • Return steak and eggs to the pan.
  • Stir in soy sauce and oyster sauce, mixing well.
  • Toss in peas and carrots (if using) and cook for 1-2 minutes.
  • Drizzle with sesame oil and stir well.

6️⃣ Serve & Enjoy:

  • Garnish with chopped green onions and serve hot!
